Gastronomy, while acknowledged as having potential, suffers from fragmentation, with few players able to standardize offerings for export or scalability.

In essence, while innovation is present, it remains peripheral and has yet to transform the core of Morocco's tourism model, which is predominantly characterized by accommodation and traditional tour circuits. The choice of Marrakech as the venue is strategic; it embodies both the successes and challenges of Moroccan tourism, including infrastructure pressure, market dependence, and uneven quality enhancements. Hosting this conference in such a context exposes these contradictions without guaranteeing concrete solutions.

Ultimately, the question arises: does Morocco aim to attract investors or to structure a market? These two objectives do not always align. Short-term capital attraction may lead to quick but poorly integrated projects, whereas market structuring requires more time yet fosters sustainable assets. This second edition will thus be evaluated on specific criteria, including the number of projects formalized, actual investment amounts, projected timelines for execution, and public monitoring mechanisms.
