He previously owned and operated Ole in Tel Aviv before taking a hiatus to serve in the military. This time around, I allowed him to surprise us, and each dish he presented surpassed the last in both taste and creativity.

Chef Asido attributes his culinary skills to his Moroccan grandmother, emphasizing the importance of hospitality in his cooking philosophy. This ethos is evident in the dishes served at Amaya, where every bite is an invitation to savor and indulge. Among the standout offerings was the Berber bread served with matbucha jam and tanziya butter, a delightful combination that showcases the chef's innovative approach. The manakish, a hot bread filled with caramelized onions and za’atar, paired beautifully with yogurt and zhug, while the date carpaccio, adorned with nuts and crème fraîche, provided a stunning interplay of textures and flavors.
